UNESCO recently included the gastronomic meal of the French in the list of the intangible cultural heritage of humanity. This work shows that this recognition has its origins in the 17th century. At that time, the arts of the table began to undergo profound transformation thanks to the establishment of new customs, the appearance of a multitude of objects (plates, cutlery, sauceboats, butter dishes, terrines, etc.) and numerous gastronomic works that contributed to the diversification of cooked foods. These elements, accompanied by the development of rules of etiquette, as well as the art of conversation and the refinement of dining room decor, adapted to the evolution of society that these four centuries experienced. This journey is illustrated here by a rich iconography and numerous quotes from observers of these different periods that allow the reader to immerse themselves in the history of this French art of living.
